Caramelizing Nuts
Using a heavy skillet, cook the pecans in the sugar mixture until sugar is melted and golden brown. Handle carefully, as caramelized sugar is very hot. Pour into a foil-lined baking pan and let cool.

Breaking Pecans
As the caramelized nuts cool they will harden. Break the sheet of nuts into small pieces by picking it up with your hands. Use immediately or store in an airtight container.
