Crushing Sugar
Place sugar cubes inside a heavy-duty plastic bag. Pound the cubes with a rolling pin until coarsely crushed.

Sprinkling Sugar
Brush the top crust with water, then sprinkle with crushed sugar. Or, use opaque pearl sugar (left dish) or translucent sanding sugar (right dish), available from baking supply catalogs or cake decorating stores.
