Peeling Tomatoes
Cut an X in the blossom end of a tomato and plunge the tomato into boiling water for about 30 seconds to loosen the skin. Drain and cool. Peel away the skin with a sharp paring knife.

Seeding Tomatoes
Halve a peeled tomato across its midsection. Hold it upside down over the sink and squeeze and shake out the seeds.
