Slashing Loaves
Some free-form loaves need to be slashed before going into the oven to control where the dough splits as it bakes. Use a sharp, thin-bladed knife to cut the top of the dough at even intervals about 1/4 inch deep.

Creating Steam
Certain recipes call for baking bread in a moist environment to develop a crisper crust. Create steam in the oven by setting a large dish filled with 1/2 inch of boiling water on the lowest rack.
