Griddles provide maximum surface area for cooking steaks, chops, and hamburgers or for preparing breakfast specialties, from pancakes to French toast to sausage. Use griddles for roasting chiles or cooking tortillas as well. The best griddles are heavy, heat-conductive cast aluminum or iron. Square stove-top models sit on one burner; rectangular ones straddle two burners. Some ranges have built-in griddles. Griddle inserts are also available for kettle-type outdoor grills.
