Pastry brushes have several uses: brushing glazes or butter onto pastry crusts or doughs, baked goods, or fruit desserts; washing down the sides of saucepans to keep crystals from forming in sugar syrups; and sweeping away excess flour when rolling out pastry or dough. Choose a brush with fairly flexible, not-too-thick, natural bristles.
