Pressure Cookers are special pots with locking, airtight lids and valve systems to regulate internal pressure. Pressure cookers reduce cooking time by as much as two-thirds by using a system whereby pressure builds up in the pot and raises the internal temperature of the cooking vessel. Pressure cookers are useful for foods with long cooking times such as beans, soups, stews, and steamed puddings.
