Butternut squash, one of the most popular winter squash, is large and elongated in shape, with one end that is almost spherical. The tan skin covers bright orange, slightly sweet flesh. Butternut squash is also known as pumpkin squash.

To prepare butternut squash for cooking:
Cut in half with a heavy knife. Tap the inserted knife with a kitchen mallet if the skin is very hard. Using a sharp-edged spoon, scrape out the seeds and fibers.
