Fructose or fruit sugar is a natural byproduct of fruits and honey. It is extremely sweet, sweeter than sucrose. It is available in both granulated and syrup forms. Fructose can be used in some liquids, such as a sauce or beverage, but generally should not be substituted for regular sugar in a recipe unless the recipe gives a specific substitution.
