Hearts of cabbage (choi sum) are the bright white stalks that come from the Bok Choy or the Chinese Broccoli plant. They are crunchy and sweet, crowned by ruffled, emerald color leaves that look similar to spinach. Excellent when steamed, stir fried or in soups.
