Scallops are bivalve mollusks with rich, slightly sweet flesh. They are marketed fresh and frozen in two common varieties. The round flesh of sea scallops is about 2 inches (5 cm) in diameter. The bay scallop is considerably smaller. Both are usually sold already shelled.
