Scotch bonnet chile, this small (1 to 1 1/2 inches in diameter), lantern-shaped chile ranges in color from yellow to orange to red. It is often referred to as the world's hottest pepper. It is hotter than the Jalapenos, but the burning sensation tends to be short lived. It is used in sauces and spice mixtures throughout the Caribbean. Usually sold fresh in most supermarkets.
