Vinegar, meaning literally "sour wine," results when wine or another alcoholic liquid is allowed to ferment a second time, turning it acidic.

Any vinegar will highlight the qualities of the alcoholic liquid from which it has been made. When the sharp acidity of vinegar is desired without any particular character, use distilled white vinegar.
