Yams are tubers that grow mainly in the tropical and subtropical regions of Africa, Asia, and America. In America, yams are often confused with the sweet potatoes. Yams have a flesh that ranges in color from pale white to a deep orange. They can be prepared much like potatoes or sweet potatoes, however, their flesh is less sweet than sweet potatoes. Select yams with firm, smooth skins. Store in a cool, dark place and use within 1 week.
