Onion, garlic, apple and raisins add a unique flavor to long grain rice.
INGREDIENTS (for 4 servings):
- 3 tablespoons butter
- 1 cup long grain rice
- 1/2 cup finely chopped onion
- 1 clove garlic, minced
- 1 small tart apple - peeled, cored and diced
- 1/2 cup golden raisins
- 1 1/2 cups chicken broth
PREPARATION:
Melt butter in a saucepan over medium heat. Stir in rice, onion, garlic, apple and raisins. Saute for 3 to 4 minutes. Stir in chicken broth, and bring to a boil. Reduce heat, cover, and simmer for 16 to 18 minutes, or until liquid is absorbed.
