Don't let the name of this recipe fool you. It may not be the prettiest cake you've ever seen, but it sure is the delicious! It is a quick apple and raisin cake that anyone could make. I've made this for a tea party, office luncheon, brunch and dessert.
INGREDIENTS (for 1 servings):
- 2 cups white sugar
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons salt
- 2 teaspoons ground cinnamon
- 1 1/3 cups vegetable oil
- 2 tablespoons eggs
- 2 teaspoons vanilla extract
- 1/2 cup raisins
- 4 cups chopped, peeled apple
PREPARATION:
Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch pan.
In a large bowl, stir together the sugar, flour, baking soda, salt, and cinnamon. Make a well in the center, and pour in the oil, eggs and vanilla. Mix until well blended. Fold in the raisins and apples. Spread evenly in the prepared pan.
Bake for 1 1/2 hours in the preheated oven, until firm and lightly browned.
