Hands down, the easiest, quickest, most delicious asparagus soup. Just add a can of blended asparagus to a can of chicken broth, a little salt and pepper, and you have a wonderful accompaniment to any meal, or even as a main course since it is hard to put
INGREDIENTS (for 4 servings):
- 1 (15 ounce) can asparagus
- 1 (14.5 ounce) can chicken broth
- 1/2 cup milk (optional)
- 1 tablespoon butter (optional)
- salt and pepper to taste
PREPARATION:
Blend the asparagus, with liquid, in a blender or food processor until completely smooth.
Heat asparagus and chicken broth together in a medium saucepan over medium heat. Stir in milk, if using, and bring to a low simmer. Stir in butter to finish, if using, and season to taste with salt and pepper.
