Welsh cookies.
INGREDIENTS (for 7 servings):
- 4 cups all-purpose flour
- 1 1/4 cups butter
- 1 teaspoon salt
- 1 1/4 cups white sugar
- 1 1/4 cups raisins
- 2 eggs
- 1 1/2 teaspoons baking powder
PREPARATION:
Preheat a griddle to moderate heat 325 - 350 degrees F (165 - 175 degrees C). Grease lightly.
Beat sugar and butter or margarine together, adding salt and baking powder. Beat in eggs. Add 2 cups of flour and raisins and mix. Then add the other two cups of flour. If too dry add a little milk if too wet add a little flour.
Roll out about 1/4 inch thick and cut out cookies.
Place on a greased griddle and brown on both sides.
