These bars are lower in fat than most bar cookies.
INGREDIENTS (for 1 servings):
- 1 1/3 cups quick cooking oats
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 cup raisins
- 1 cup mashed bananas
- 1/4 cup skim milk
- 2 egg whites
- 1 teaspoon vanilla extract
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C).
Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.
