An exotic dessert perfect for breaking the fast during Ramadan. Black glutinous rice and pandan leaves can be found in Asian grocery stores.
INGREDIENTS (for 8 servings):
- 1 2/3 cups water
- 1 pandan leaf
- 3/4 cup black glutinous rice
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 2 cups coconut milk
PREPARATION:
In a saucepan bring water and pandan leaf to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove pandan leaf and stir in brown sugar and white sugar. Continue to cook for 5 minutes. Stir in the coconut milk and remove from heat.
