This is a versatile recipe. Once you get the hang of it you can make up your own version. This one has brown rice, peanut butter and whole wheat bread stirred into a base of milk and carrot.
INGREDIENTS (for 6 servings):
- 2 cups water
- 1 cup uncooked brown rice
- 1/2 cup chopped onion
- 2 cups finely grated carrots
- 1/4 cup peanut butter
- 3 slices whole wheat bread, crumbled
- 2 cups milk
- salt and pepper to taste
PREPARATION:
Bring water to boil in a medium pot; add rice. Reduce temperature to a simmer, and cook for 25 to 30 minutes or until done.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a medium size mixing bowl, combine onions, carrot, cooked rice, peanut butter, bread, milk, salt and pepper. Place mixture in the prepared loaf pan.
Bake for 45 minutes.
