This is a very light yet amazingly tasty coleslaw. Instead of usual mayo this version uses Greek yogurt and the taste doesn't suffer in the least. Very refreshing.
INGREDIENTS (for 6 servings):
- 1 onion, finely chopped
- 1 head cabbage, finely chopped
- 4 carrots, grated
- 1 cup Greek yogurt
- 1 (8 ounce) can sliced pineapple, drained and chopped
- salt and pepper to taste
- paprika to taste
- garlic powder to taste
PREPARATION:
In a large bowl, mix the onion, cabbage, carrots, Greek yogurt, and pineapple. Season with salt and pepper, paprika, and garlic powder. Chill 30 minutes in the refrigerator before serving.
