Easy open-faced sandwiches made with tomatoes, peppers, celery, and cheese. This is one of my husband's favorite childhood recipes. Quick and delicious after school snack for kids.
INGREDIENTS (for 4 servings):
- 1 small onion, finely chopped
- 1 medium tomato, diced
- 1 stalk celery, chopped
- 1 green bell pepper, finely chopped
- 1 cup shredded reduced-fat Cheddar cheese
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 4 slices SARA LEE® Soft & Smooth™ Whole Grain White Bread
PREPARATION:
Preheat your oven's broiler.
In a medium bowl, stir together the onion, tomato, celery, bell pepper, cheese, chili powder, and salt. Arrange slices of bread on a baking sheet or broiling pan. Top each one with 1/4 of the mixture, spreading out to the edges.
Broil for 4 to 5 minutes, or until cheese melts. Watch closely to prevent burning. Serve immediately.
