These tomatoes are marinated in a delightful blend of balsamic vinegar and herbs. A perfect snack for phase 1 dieters.
INGREDIENTS (for 1 servings):
- 10 cherry, grape, or small heirloom tomatoes (or mix thereof)
- 2 teaspoons dried oregano
- 2 teaspoons balsamic vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 pinch ground black pepper
PREPARATION:
Halve tomatoes and toss with oregano, oil, vinegar, salt, and pepper. Let sit for a minute or two to let flavors develop. Enjoy.
Note:Tomatoes should be kept at room temperature.
