This is a quick soup made by combining canned tomato juice with oregano and a bag of mixed frozen vegetables.
INGREDIENTS (for 4 servings):
- 1 (32 fluid ounce) bottle tomato juice
- 1 (16 ounce) package frozen mixed vegetables
- 2 cups water
- 1 pinch dried oregano
- salt and pepper to taste
PREPARATION:
In a large pot over medium heat combine the tomato juice, water, mixed vegetables, oregano or Italian spices and salt and pepper to taste. Allow to simmer for 30 minutes.
