I use this frosting for my low fat carrot cake.
INGREDIENTS (for 1 servings):
- 1 (3 ounce) package Neufchatel cheese
- 2 cups low fat margarine
- 2 cups confectioners' sugar
- 1 teaspoon vanilla extract
PREPARATION:
In a medium bowl, beat cream cheese and margarine until smooth. Add vanilla. Add sugar 1/4 cup at a time until all is added. Beat until smooth.
