First you saute onion with cinnamon and cumin. A very happy beginning. Then you stir in tomatoes, fresh shelled peas and coconut milk perfumed with chili powder, coriander, and turmeric. Simmer until peas are tender.
INGREDIENTS (for 4 servings):
- 4 teaspoons coconut milk
- 1 teaspoon chili powder
- 1 1/2 teaspoons ground coriander seed
- 1 pinch ground turmeric
- salt to taste
- 2 teaspoons ginger oil
- 1 onion, chopped
- 1 small cinnamon stick
- 1/2 teaspoon cumin seeds
- 4 tomatoes, chopped
- 1 pound fresh pea pods, shelled
PREPARATION:
In a small bowl, mix together coconut milk, chile powder, coriander, turmeric, and salt.
In a medium saute pan, heat oil over medium heat. Add onion, cinnamon stick, and cumin seeds; saute until onions are soft.
Stir in tomatoes, peas, and coconut milk mixture. Reduce heat, and simmer until the peas are tender.
