What makes this Fruit Cocktail Cake the greatest is that it is served with a wonderful butter sauce. Also, it is so simple to make. I know when you try it you will agree. (Double all ingredients to bake in an 11x13-inch pan.)
INGREDIENTS (for 8 servings):
- 1 egg
- 1 cup fruit cocktail, drained
- 1 cup white sugar
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup white sugar
- 1/2 cup evaporated milk
- 1/2 cup butter
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C). Grease one 9-inch square pan.
With an electric mixer, mix egg, fruit cocktail, 1 cup sugar, flour, soda, and salt in order given. Pour into prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes.
To make sauce: bring to a boil 1 cup sugar, evaporated milk, and butter or margarine. Serve hot on cake.
