These are great cookies to make with kids since they don't have to be baked. I'm not sure how "healthy" these are, but they are a nice snack.
INGREDIENTS (for 1 servings):
- 3/4 cup natural peanut butter
- 3/4 cup honey
- 1/2 cup granola
- 1/2 cup crisp rice cereal
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1/2 cup graham cracker crumbs
- 1/2 cup shredded coconut
PREPARATION:
Heat honey and peanut butter together over low heat until creamy. Remove from heat and cool.
Mix the rest of the ingredients into the honey/peanut butter mixture, except coconut. Shape into balls. Roll in coconut and refrigerate or eat right away.
