If you've ever made gelatin, you can make this delightful salad. Lime gelatin, pineapple juice, a bit of chilling, and then comes the pecans, pineapple chunks and lots of Cheddar cheese. Chill again and un-mold.
INGREDIENTS (for 7 servings):
- 1 (6 ounce) package lime flavored gelatin mix
- 1 (20 ounce) can pineapple chunks - drained with juice reserved
- 1 cup mayonnaise
- 1 cup shredded Cheddar cheese
- 1/2 cup chopped pecans
PREPARATION:
In a small saucepan, dissolve lime gelatin in 2 cups boiling water. Remove from heat and add 3/4 cup of reserved pineapple juice. Cool to room temperature.
Add mayonnaise to gelatin mixture and whisk together until smooth. Refrigerate until slightly thickened.
Fold in the pineapple, Cheddar cheese and pecans. Pour in 2 quart mold and chill until firm.
