This chicken in this recipe is keeping some pretty fine company. Lots of color - green pepper and pimento. Lots of crunch - potato chips and almonds. And then there 's the cheese and creamy mayonnaise. Serves twelve.
INGREDIENTS (for 1 servings):
- 2 1/2 cups chopped, cooked chicken meat
- 2 cups chopped celery
- 1/2 cup chopped salted almonds
- 1/4 cup chopped green bell pepper
- 2 tablespoons minced onion
- 2 tablespoons chopped pimento peppers
- 3/4 teaspoon salt
- 2 tablespoons lemon juice
- 1/2 cup mayonnaise
- 1/3 cup shredded Swiss cheese
- 3 cups crushed potato chips
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C).
Combine the chicken, celery, almonds, bell pepper, onion, pimento, salt, lemon juice, and mayonnaise. Mix well and pour into a 1 1/2 quart casserole dish.
Top with grated cheese and the crushed potato chips. Bake for 25 minutes or until cheese is melted.
