This hearty recipe makes enough casserole to feed a crowd. A flavorful blend of ground pork and beef is sauteed in butter with onion, celery and green pepper, then baked with tomatoes, kidney beans, pasta and cheese.
INGREDIENTS (for 2 servings):
- 1 pound lean ground beef
- 1 pound ground pork
- 1/4 cup butter
- 1 onion, chopped
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 1 (28 ounce) can stewed tomatoes, with liquid
- 1 (15 ounce) can kidney beans
- 2 teaspoons salt
- 1 (16 ounce) package macaroni
- 1/2 cup grated Parmesan cheese
PREPARATION:
Cook pasta in a large pot of boiling water until done. Drain.
In a large skillet, saute onion, celery, and green pepper in butter or margarine until softened. Add ground beef and pork, and cook until meat is done. Drain well.
Combine with stewed tomatoes, beans, salt, and pasta. Spread into two 9 x 13 inch baking pans. Top each pan with 1 cup cheese.
Bake at 350 degrees F for 30 to 35 minutes.
