You can make these with or without raisins.
INGREDIENTS (for 3 servings):
- 3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup shortening
- 2 eggs
- 2 cups packed brown sugar
- 1 cup strong brewed coffee
- 1 cup raisins (optional)
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
In a large bowl, cream the shortening, brown sugar and eggs. Stir in the coffee. Gradually blend in flour, baking soda, cinnamon and salt. Stir in raisins if using. Drop by spoonfuls 2 inches apart on cookie sheets.
Bake 10 to 12 minutes. Let cool on wire racks.
