You 'll be tempted to serve sweet potatoes for breakfast, lunch and dinner. These are pretty special. Sliced potatoes are doused with sugar, bourbon, vanilla and butter and then baked until the sauce is absorbed and the sweet potatoes crusty and brown.
INGREDIENTS (for 8 servings):
- 6 large sweet potatoes, peeled and sliced
- 1 cup white sugar
- 1/2 cup butter
- 1/2 cup bourbon
- 1/2 teaspoon vanilla extract
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C).
Arrange sweet potatoes in a 9x13 inch baking dish.
Combine sugar, butter, bourbon and vanilla extract in a large saucepan and heat to a boil. As soon as the sauce comes to a boil pour it over the sweet potatoes.
Bake 30 to 40 minutes or until the sweet potatoes are soft.
