Feed this soup to your young athletes, it is a protein powerhouse. Lentils and frankfurters combine with bacon, onions, celery, carrots, and tomatoes for a stick-to-your ribs supper.
INGREDIENTS (for 9 servings):
- 1 cup dry lentils, rinsed
- 2 slices bacon, diced
- 1/2 cup chopped onion
- 1 cup chopped celery
- 1/2 cup chopped carrots
- 8 cups water
- 2 cups canned tomatoes
- 1 bay leaf
- 6 frankfurters, sliced
- salt to taste
- ground black pepper to taste
PREPARATION:
Saute bacon and onion.
Place lentils, bacon, onion, celery, carrots, water or stock, tomatoes, and bay leaf together in a large pot and simmer until tender, about 45 minutes.
Add sliced wieners and salt and pepper to taste, and continue cooking for about 10 minutes.
