This is a good cake frosting, and is especially good when the maple syrup can be purchased in March. You can use the artificial for those of you who do not live in the north, or cannot obtain it. This recipe will fill and frost a 9 inch cake.
INGREDIENTS (for 1 servings):
- 2 egg whites
- 1 1/4 cups packed brown sugar
- 1/4 cup maple syrup
- 3 tablespoons cold water
- 1/8 teaspoon cream of tartar
- 1/4 cup chopped walnuts
PREPARATION:
Place egg whites, brown sugar, maple syrup, water, and cream of tartar in the top of a double boiler over boiling water. Beat with a mixer until frosting has a good spreading consistency, and will stand in peaks. Remove from heat.
Fill and frost cake. Sprinkle the top with chopped nuts.
