A virtually fat-free indulgence: Succulent berries and ripe peaches in a 'marinade' of honey, lemon, and sweet sparkling wine.
INGREDIENTS (for 8 servings):
- 3 tablespoons honey
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 2 cups fresh blackberries
- 2 cups fresh raspberries
- 2 cups fresh blueberries
- 2 cups sliced peeled peaches
- 2 2/3 cups Asti Cinzano or other sweet sparkling wine
- 16 amaretti cookies
PREPARATION:
Combine first 3 ingredients in a 2-cup glass measure; microwave at high 11/2 minutes or until the mixture boils. Cover and chill.
Combine the blackberries, raspberries, blueberries, and peaches in a large bowl. Add the honey mixture, stirring well. Cover and marinate in refrigerator at least 4 hours.
Spoon the fruit mixture into each of 8 bowls, and add the wine. Serve with amaretti cookies.
