Pure unadulterated salad. Just a splash of olive oil and lemon juice adorn this yummy salad of black olives, feta, roasted peppers and macaroni. But that 's all that 's needed to bring out the flavors. Simply delicious.
INGREDIENTS (for 2 servings):
- 1 cup macaroni
- 2 ounces roasted red bell peppers, diced
- 1/4 cup sliced black olives
- 1/4 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 teaspoon lemon juice
- salt and pepper to taste
PREPARATION:
In a small bowl or cup, combine olive oil and chopped garlic. Set aside.
Cook pasta in a large pot of boiling water until al dente. Drain.
Transfer pasta to a medium mixing bowl, and add roasted red peppers, olives, and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.
