A garlicky marinade of rice flour, soy sauce, eggs, green onion and cayenne precedes the deep fry for this Asian entree. You can customize this dish by varying the spices according to your preferences.
INGREDIENTS (for 7 servings):
- 5 pounds boneless skinless chicken breasts, cut into strips
- 1 cup white rice flour
- 1/3 cup cornstarch
- 1 cup soy sauce
- 1 1/2 tablespoons salt
- 1/2 cup white sugar
- 1 cup chopped green onions
- 6 cloves garlic, minced
- 1 teaspoon cayenne pepper
- 5 eggs
PREPARATION:
In a large bowl combine the flour, cornstarch, soy sauce, salt, sugar, green onions, garlic, cayenne pepper and eggs. Mix well. Add the chicken and marinate for 24 hours, refrigerated.
Remove from refrigerator, deep fry and serve.
