Radishes add flavor and crunch to this macaroni salad. This would be the perfect stuffer for plump ripe, hollowed out tomatoes. You may adjust the amount of mayonnaise to suit your taste.
INGREDIENTS (for 1 servings):
- 1 pound macaroni
- 1 bunch radishes, sliced
- 1 green onions
- 6 large stalks celery, chopped
- 1/4 cup mayonnaise
- salt and pepper to taste
PREPARATION:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse under cold water, and drain.
In a large bowl, combine the pasta, radishes, green onions, celery, mayonnaise, salt and pepper. Mix well, chill, and serve with sliced tomatoes.
