This cookie has an unusual combination of flavors - coconut and oatmeal.
INGREDIENTS (for 1 servings):
- 1 1/2 cups self-rising flour
- 3/4 cup rolled oats
- 3/4 cup white sugar
- 1 cup flaked coconut
- 6 tablespoons butter
- 1 tablespoon golden syrup
- 2 tablespoons boiling water
- 1 pinch baking soda
PREPARATION:
Preheat oven to 350 degrees F (180 degrees C) and grease cookie sheets.
Mix together flour, oatmeal, sugar, and coconut.
Melt the butter or margarine, and combine with the water. Add the liquids to the dry ingredients.
Place spoonfuls of mixture on tray well spaced. Bake in center of oven for 15-20 minutes.
