Simply cream butter, eggs and sugar together along with cinnamon, nutmeg and cloves. Then fold in chopped pecans, golden raisins and beaten egg whites. This simple recipe yields two wonderful pies. Top them with vanilla or rum raisin ice cream.
INGREDIENTS (for 1 servings):
- 2 cups white sugar
- 1 cup butter
- 4 eggs, separated
- 1 cup chopped pecans
- 1 cup golden raisins
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 recipe pastry for a 9 inch single crust pie
PREPARATION:
Cream together butter and sugar. Mix in egg yolks, and then the spices. Fold in the fruit and nuts.
In another bowl, beat egg whites until firm. Fold into fruit and nut mixture. Divide into two pie shells.
Bake at 350 degrees F (175 degrees C) for 45 minutes.
