For a speedy cooktop supper, serve this meatless main dish with sliced tomatoes and breadsticks.

INGREDIENTS (for 4 servings):

PREPARATION:

  • COOK fettuccine according to package directions; drain and set aside.
  • COOK spinach according to package directions; drain and set aside. Saute garlic in olive oil in a large skillet until tender but not brown. Stir in cooked spinach, salt, and pepper; cook until thoroughly heated.
  • Toss together spinach mixture, fettuccine, Parmesan cheese, and pine nuts in a large serving bowl. Serve immediately.
