Peanuts are folded into the yummy filling, poured into a pastry shell and baked. It emerges, gooey, sweet and wonderful, reminiscent of a pecan pie. Serve this tasty treat with lots and lots of whipped cream.
INGREDIENTS (for 8 servings):
- 2 eggs
- 1/3 cup creamy peanut butter
- 1/3 cup white sugar
- 1/3 cup light corn syrup
- 1/3 cup dark corn syrup
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
- 1 cup salted peanuts
- 1 (9 inch) pie shell
PREPARATION:
Preheat oven to 375 degrees (190 degrees C).
In a large bowl, beat eggs until light. Gradually add peanut butter, sugar, light and dark corn syrups, melted butter, and vanilla. Mix well. Fold in peanuts.
Pour into crust. Bake at 375 degrees F (190 degrees C) for 30 to 35 minutes or until set. Cool before serving.
