This is a bit more gingery and spicy than the recipe above. But it has it 's sweetness too, honey. Two surprises, jalapeno peppers and slivers of basil added at the last minute.
INGREDIENTS (for 9 servings):
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoons minced fresh ginger root
- 1/4 cup vegetable oil
- 1 jalapeno pepper, seeded and minced
- 1 cup peanut butter
- 1 1/4 cups water
- 1/4 cup tamari
- 3 tablespoons honey
- 1/4 cup fresh basil leaves, cut into thin strips
PREPARATION:
In a saute pan, heat oil over medium heat. Add onions, and saute until tender. Add garlic, jalapeno pepper, and ginger; cook and stir for 2 minutes.
Stir in peanut butter, water, tamari, and honey until smooth. Add shredded basil. Heat through, and remove from heat.
