There's not a smidge of tomato sauce in these mini pizzas--the pungent flavor comes from garlicky storebought pesto and Parmesan.
INGREDIENTS (for 2 servings):
- 1 ready made pizza crust
- 1/2 cup pesto
- 1 cup ricotta cheese
- 1/4 cup grated Romano cheese
- 2 tomatoes, sliced
- 1/4 cup grated Parmesan cheese
PREPARATION:
Preheat oven to 450 degrees F (230 degrees C).
In a small bowl, combine Ricotta and Parmesan.
Spread pesto over the ready-to-cook pizza crust. Spread the ricotta and Parmesan over the pesto, and layer the tomatoes over the cheese. Sprinkle with Parmesan to taste.
Bake for 12 to 15 minutes.
