Mashed potatoes combined with cream cheese, onion, eggs and flour, and topped with French-fried onions. A great way to use left over mashed potatoes!
INGREDIENTS (for 4 servings):
- 4 potatoes, chopped
- 1 (8 ounce) package cream cheese, softened
- 1 small onion, finely chopped
- 2 eggs, beaten

- 1/8 teaspoon pepper
- 1/2 (6 ounce) can French-fried onions, crushed
PREPARATION:
Preheat oven to 300 degrees F (150 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash.
