Pineapple filling used for cakes and desserts. Pineapple and juice are thickened with flour and egg over a double boiler.
INGREDIENTS (for 1 servings):
- 1/2 cup white sugar
- 4 tablespoons all-purpose flour
- 1/8 teaspoon salt
- 1 egg
- 1 cup diced fresh pineapple
- 3/4 cup pineapple juice
- 1 tablespoon butter
PREPARATION:
In the top of a double boiler over simmering water, combine sugar, flour and salt. Stir in egg, pineapple and pineapple juice. Cook, stirring frequently, until mixture has thickened. Stir in butter. Remove from heat and allow to cool.
