Boiled squash is combined with eggs, Parmesan cheese, mayonnaise, onion and green pepper and baked with a bread crumb topping in this casserole serving six.
INGREDIENTS (for 6 servings):
- 2 pounds winter squash
- 2 eggs, beaten
- 3/4 cup mayonnaise
- 1 small onion
- 1/4 cup chopped green bell pepper
- 1 cup grated Parmesan cheese
- 1/2 cup bread crumbs
PREPARATION:
Butter and flour one 8x12 inch baking pan. Preheat oven to 350 degrees F (175 degrees C).
In a pot of lightly salted water, boil squash and onion until tender. Drain well.
In a mixing bowl, combine squash, eggs, mayonnaise, onion, bell pepper and cheese. Place into baking pans, sprinkle with bread crumbs, bake for 30 minutes.
