Mushrooms, onions and celery are cooked in a fat-free vinaigrette until the dressing is absorbed and the vegetables tender. This yummy concoction is then spooned over warm, cubed, cooked potatoes. Delicious.
INGREDIENTS (for 2 servings):
- 3 potatoes, cubed
- 1/4 cup fat free Italian-style dressing
- 2 cups fresh sliced mushrooms
- 1 onion, finely diced
- 2 stalks celery, chopped
PREPARATION:
Place potatoes in a pot of boiling water until tender. Drain well.
Spray a frying pan with non-stick cooking spray and pour in dressing. Over a medium heat fry the mushrooms, onions and celery. When cooked to your desired texture pour the mixture over the potatoes. Serve hot.
